Quarter(1/4) of a calf will be approximately, but no less than 100 lbs. for $10.00 lb. The following is a list of the cuts of meat included in the quarter of a calf. There will be approximately 60 plus lbs. of ground meat, approximately 15 lbs. of Sirloin, Round Steak, T-Bone, Bone N Ribeye, New York Strips, Chuck Eye Steak, Denver Steak, Petite Tender Cutlets and Tenderloin. The rest of the 100 lbs. or more is made up of Short Ribs, Shank ((osso bucco)soup bones, Brisket, Fajita ( Skirt) , Flat Iron, Flank, Chuck or, Shoulder, Pikes Peak or Rump roast, coulette, or sirloin bavette. General cooking instructions : all ground meat needs to covered with a lid to keep moisture in the dish. All steaks
need to be marinated in milk approx. 24 hrs. (Milk is a natural tenderizer, any kind of milk.) Look on the internet for osso bucco recipes some even using wine but still marinate for at least 12 hours. Braise roasts & stew and then cook in milk 3/4 cup to 1 1/4 cups.
